Bircher Muesli

We first discovered this wonderful little breakfast while we were in Australia. A perfect breakfast for those of you that have to rush out the door each morning. Make it Sunday night, and you have an instant delicious and healthy breakfast for the whole week.

Only 139 calories per serving

BIRCHER MUESLI - Makes 8 servings
2 cups large flake rolled oats
1/2 cup barley flakes (optional)
1/2 cup milk
1 apple, peeled and grated
3/4 cup orange juice
1/4 cup honey
Combine all ingredients and refrigerate overnight for up to a week.
Serve with a tad of milk or plain yogurt

When we had this in Australia, it was shaped by placing your meal portion in a cup and plating it from the emptying the cup to form a nice little molded shape. They drizzled yogurt over the top and down one side. On top of the yogurt, they drizzled grated apple. It looked like a dessert it was so pretty. At any rate, Joaquim made me a bowl of this before he left and I am still enjoying it every day. So easy when I am rushing out the door to go to work.
I add raisins and crushed almonds to mine....but feel free to toss in whatever you like (sunflower seeds, flax, extra fruit)
