The Best Dessert EVER!

I just made this dessert. It is simple to make and very very good.
I hope you try it out.
The cake part of it is as light as air!
This dessert is so awesome that you will want to serve it to company!
Joaquim used to LOVE lemon pie but he says this is now his favorite dessert

LEMON CUSTARD CAKES
Unsalted butter for custard cups
3 large eggs, separated
1/2 cup granulated sugar
2 Tablespoons flour
2 tsp lemon zest
1/4 cup fresh lemon juice (from lemon)
1 cup milk
1/4 teaspoon salt
Confectioner's sugar for dusting
  • Preheat oven to 350 degrees. Set a kettle of water to boil. Butter six 6oz custard cups and place them in a roasting pan or baking dish.
  • In a large bowl, whisk together the egg yolks and granulated sugar until light, whisk in the flour. Gradually whisk in the lemon zest and juice, then whisk in the milk.
  • With an electric mixer, beat the egg whites with salt until soft peaks form. Add to the lemon mixture by gently folding in with a whisk.
  • Divide the batter among the prepared cups. Place the pan in the oven, and fill the pan with the boiling water to reach half way up the sides of the cups. Bake until the puddings are puffed and lightly browned (20 to 25 minutes) Serve warm or at room temperature, dusted with confectioners sugar.
  • Note - if you do not have custard cups, bake in an 8 inch square baking dish for 30 - 35 minutes
